Mogu se također ostraniti kosti od mesa. Kosti se upotrebe za juhu, a meso se iskoristi na razne načine. U tiganj se stavi 1 žlica masti da se ugrije, dodaju kosti, list celera, malo narezana korijena od celera i peršina, 2-3 izrezane mrkve, 1/2 narezana luka i 4-5 zrna papra. Sve se to  dobro na masti isprži i stavi u 2 litre mlačne vode da tiho kuha. Osoli se i kuha 2 sata. Tikve ogulimo, očistimo od koštica i meso narežemo na kockice. Vrhnje izmiješamo s mlijekom, solju, paprom, oraščićem i juhom od peradi, pa pomiješamo s mesom tikve. Time napunimo vatrostalnu posudu i juhu pokrivenu zgotovimo za 60 minuta u pećnici. Kriške bijeloga kruha narežemo na kockice. Maslac rastopimo u tavu i na njemu zlatnosmeđe popržimo kockice kruha. Tijesto pustimo da se ohladi, pa ga izmiješamo s 3/4 l mlake vode. Umiješamo koricu kruha. Masu stavimo u posudu, pokrijemo komadom gaze i pustimo da odstoji 3 dana na sobnoj temperaturi. Tijesto će za to vrijeme postati "kvas" tj. uskisnut će. Gljive namačemo 2 sata u vodi. Zelenje za juhu očistimo i sitno narežemo. Zakuhamo litru vode. Dodamo ocijeđene gljive i zeleje za juhu i kuhamo pokriveno 30 minuta na blagoj vatri. Juhu procijedimo. Gljive sitno narežemo i vratimo u juhu. već prema tome kako kiselu juhu želimo, dodamo 1/2 - 3/4 l kvasa. Češnjak protisnemo kroz tijesak za češnjak u juhu i pustimo da juha lagano kuha još 30 minuta. Krupir ogulimo, narežemo ga na kockice velike oko 1 cm i dodamo nakon 15 minuta u juhu. Kobasice u ploškama ugrijemo u juhi. Juhu posolimo. Zatim je ocijedimo i kuhamo i litri juhe od mesa 1 sat i pol na blagoj vatri. Sušene gljive namočimo u malo mlake vide, sviježe gljive očistimo i narežemo na listiće. Luk, povrće i krumpir ogulimo ili očistimo, operemo i narežemo na kocke. U veliku loncu ugrijemo ulje i na njemu staklasto popržimo luk. Dolijemo ječam s tekućinom od kuhanja i ostatkom juhe od mesa. Dodamo gljive, povrće, krumpir i lovorov list, pa sve pokriveno na blagoj vatri zgotovimo za oprilike 30 minuta. Uklonimo lovorov list. Juhu začinimo solju i paprom. Kopar ili peršin operemo, ocijedimo i sitno nasjeckamo. Rastopimo polovicu maslaca i na njoj prevrućući zlatnožuto popržimo kolutiće luka. Brašnom pospemo luk, Zapržimo ga i malo pomalo miješajući dolijemo vodu. dodamo sol i papar. juhu od luka kuhamo pokrivenu 20 minuta na srednje jakoj vatri. Kriške bijelog kruha raspolovimo i zlatnosmeđe popržimo s obju strana na ostatku maslaca. Pećnicu ugrijemo na jaku temperaturu. Kriške bijeloga kruha razdijelimo u 4 vatrostalne šalice za juhu. Juhu od luka skinemo sa štednjaka i u nju uimješamo bijelo vino. Češnjak ogulimo, krupno narežemo i zgnječimo sa solju. Ulje ugrijemo u veliku loncu pa češnjak izmiješamo s vrućim uljem. Kriške bjelog kruha stavimo na ulje i malo popržima s obju strana, oprezno preokrećući. Papriku pospemo po bijelom kruhu i dolijemo hladnu vodu. Kad juha zakuha pustimo je da na blagoj vatri vrije 2-3 minuta. Lonac skinemo sa štednjaka. Jaja razbijemo jedno za drugim, svako pustimo de klizne u zaimaču pa ga sa zaimače stavimo u vruću juhu. Lonac s juhom zatim vratimo na pločku štednjaka i tamo ga na blagoj vatri ostavimo da se bjelanci skrutnu. Bademe osolimo i ugrijamo uz stalno miješanje u vatrostalnoj posudi ili u loncu. Dodamo krupicu, propržimo je pa u smijesi krupice i badema rastopimo maslac. Malo pomalo dolijemo juhu od mesa ili povrća. Juhu češće miješamo na blagoj vatri. Kad zakuha pustimo krupicu da na blagoj vatri bubri 10 minuta. Žumanjke razmutimo s vrhnjem, solju i paprom.
